Head Chef, Hertford

£40,000 + live-in accommodation (or £44,000 live-out)

An 18th-century hotel in the heart of Hertford, this flagship site is part of a collection of around 90 managed pubs, some with rooms. Recently refurbished, it features 35 bedrooms and a relaxed dining area serving up to 100 covers at full capacity.

We are looking for a Head Chef to lead the kitchen and continue the strong reputation for quality, seasonal food.

What you will be doing

  • Leading a small, close-knit team of around nine chefs, including one or two Sous Chefs
  • Creating fresh, seasonal menus that change four times a year
  • Managing daily operations and maintaining high kitchen standards
  • Working closely with the support team based nearby
  • Driving consistency and creativity across all dishes

  • £40,000 salary with live-in accommodation (shared property, 10 minutes’ walk, with parking)
  • Quarterly and annual bonuses (around £200 per month)

Breakfast is handled by a dedicated Breakfast Chef, giving you time to focus on menu development and leading service.
